These are fish tacos. Aren’t they lovely?

It is 163 degrees here in our corner of North Carolina, which means that if I don’t work out before 7 am I am suffering. SUFFERING. It also means that I only want two things: Latin-inspired food and margaritas. On the rocks. With salt.

This heat means that there is no need to wear make-up. There is no point in fixing my hair (because it is a humidified curl-a-rama disaster). I have abandoned shoes completely ( I DO wear them in public, ya’ll. Don’t freak out. Does anyone remember Britney Spears parading around a gas station a few years back all barefooted and proud? That is no. NO.). Tank tops are the only shirts in my wardrobe for the next three months.

I am going through an entire bunch of cilantroย on the dailyย because I want it on everything. Evuuuurrrrreeeeeething.

During the last few weeks I’ve been passed a few awards from readers that found me award-worthy. Thank You!!! Awards do come with a few strings attached — answering questions and telling you little things about me are requirements of acceptance AND I have to nominate some of my favorite blogs to pass the awards on to (that is the best part). Terri at A Time to Be Inspired gave me the Versatile Blog Award. It asks for seven things about me.

Deanna over at A Year of Healthier Living presented me with the Sunshine Blogger’s Award. It asks about my favorite things. You can read about that AND Tyrannosaurus Rex HERE.

Hot Rod Cowgirl gave me the One Lovely Blog Award. That’s a new one for me. It asks seven MORE things about me. I really feel like I’m talking an awful lot about myself here, but, well… you asked.

1. True Romance is my favorite movie. Alabama Worley is the greatest character ever. Period.
2. I love a coloring book and a new box of Crayola crayons. Sheer awesomeness.
3. I just finished the first month of the Insanity workout this morning. I’ve lost fifteen pounds AND I still eat brownies. In the words of Tina Fey, “BLAM-O!!!”
4. I think I want to cut my hair. And then I think I don’t. Too much indecision there.
5. In my humble opinion, celery is just a vehicle for bleu cheese dressing or peanut butter.
6. I can’t stand it when people use the incorrect versions of “to” and “too”. Or “there”, “their”, and “they’re”. Come ON!
7. I can drive the rail buggy, but only if Chad shifts the gears. For some reason me and that transmission just don’t get along.

Enough about me. Let’s talk about the blogs I’d like to nominate. And this avacado.

Since the last time I received some of these awards the rules have changed a little bit. If I were to nominate the set number of blogs for each of these three awards I’d have to list you 40 right here. I think that completely dilutes the purpose. So I’m breaking that rule and giving you five awesome picks. Read them!

  • A Window Into the Woods – amazing wildlife photography. A baby raccoon, horses, and squirrels!!

Make a margarita, a plate of fish tacos, and sit in the shade with a few new reads.

Spicy Fish Tacos with Cilantro Lime Cream (from Can You Stay for Dinner?)


Pico de Gallo (or chunky fresh salsa)


small corn tortillas

shredded lettuce

Cilantro Lime Cream:
~ 1/2 cup sour cream
~ 1 teaspoon grated lime zest
~ 1 teaspoon lime juice
~ 2 cloves garlic, minced
~ 1/4 teaspoon smoked paprika
~ 1/4 teaspoon salt
~ 2 tablespoons cilantro, finely chopped

1 pound flaky white fish (I used tilapia)seasoned with :
~ 1/4 cup fresh lime juice
~ 1 teaspoon smoked paprika
~ 1 teaspoon cumin
~ 1/2 teaspoon cayenne pepper
~ 3 cloves garlic, very finely minced
~ 1/2 teaspoon salt

2 tablespoons oil

To Make

Mix together all the ingredients for the Cilantro Lime Cream, cover tightly, and refrigerate. In a large-ish bowl mix together all of the seasonings for the fish. Add in the fish and then toss to evenly coat. Cover and refrigerate for about 20 minutes. Heat the oil in a large skillet over medium-high heat. Put the marinating fish and sauce in the skillet and cook for 3 minutes on one side without turning. Flip the pieces of fish and cook for about 3 more minutes. Flake the fish with a fork.

To assemble the tacos, spread each corn tortilla with guacamole. Add a few pieces of fish, a bit of shredded lettuce, a heap of pico or fresh salsa, and the Cilantro Lime Cream.

    • Thank you so much! I will GLADLY share some of this hot weather. Humidity, too. It will be nearly 100 F here this week and the second you walk out the door the damp air drenches you. Chad sprayed me with the hose when my back was turned yesterday and I was SO GLAD!!! ๐Ÿ™‚

  2. OMG, you like True Romance?! That is one of my favorite movies, too!! First, I love Christian Slater and Patricia Arquette as a couple. They were darling together.

    “I had to come all the way from the highway and byways of Tallahassee, Florida to MotorCity, Detroit to find my true love. If you gave me a million years to ponder, I would never have guessed that true romance and Detroit would ever go together.”

    And second, you’ve lost 15 pounds?? That’s amazing!! I really am trying this workout.

    • True Romance is and always will be my favorite movie evuuuur. They DID make an adorable couple. Most people don’t know what in the world I’m talking about when I mention that little piece if cinematic happy; THANK YOU!!!
      And yes, I have totally lost 15 pounds (and earned every single one gah!!). That workout is insanely hard, but completely worth it. If you like a challenge, want to tone, and especially if you are interested in improving your cardio endurance, I highly recommend it.
      And congratulations to YOU on the award! I really do enjoy your posts, comments, and conversation. ๐Ÿ™‚

  3. Thank you for the award! I like being super ๐Ÿ™‚ Although I may just steal your list of things – True Romance – amazing; colouring books – love them; incorrect spellings of homonyms – aaaaargh! (And I also HATE it when people write loose when they mean lose!); celery to me is for casseroles though and, while I’m mega impressed at your sticking to the exercise and losing weight, I’m still fighting that one! Also, that salsa looks yummy!

    • Hey Rachael! You ARE super! Seriously – your photo collages and happy reflections on things are awesome. You are more than welcome to steal my list, though I think I should have added glitter to it. Glitter is just as awesome as crayons and a coloring book. I DO cook with celery often, but I eat it as a snack all the time (It’s really a great excuse to eat peanut butter out of the jar). I think I finally got to the point with the exercise that I made it part of my routine. It’s 6 days a week and when I take Sunday off I feel like something’s missing. Weird, right?

  4. Celery has it’s place as a flavoring, but for stuffing with peanut butter, cream cheese, pimento cheese, and the like, I use bok choi. Love the stuff, it’s a super food packed with nutrients, and no strings! It’s only been 90-ish in my corner of NC, by the way, and kinda gray and drizzly today, so less than that. But I used to be in Fayetteville so I know what you mean about that land-locked heat here in our fine state. MORE LIMES AND CILANTRO! lol

  5. Oh, and I totally feel you on the grammar issues. I can accept it on twitter and text messages, but there is no excuse on blogs, on Facebook, or in emails where space is unlimited! All I can figure is that education standards have fallen way off in the last 30 years, and they’ll graduate anyone;)

    • Limes and cilantro on everything!!! I actually really love celery. Of course I cook with it, but crunchy celery and bleu cheese…. YUM. We don’t get cloud action here until early evening; we have had some AMAZING thunderstorms the last few days. I love that. I don’t know that educational standards have changed… but students are definitely TOO lazy to figure it out. It bothers me most on things that are official. Like the newspaper (I wish I were joking).

  6. Love this! I’ve never had fish tacos (I know, I live a sheltered life), but your post has inspired me to try them… just as soon as I’m done licking my computer screen.

    Also, #2,4,5 & 6: we’re total twinsies. I have to ask, what is the Insanity workout?!?

    • Oooooooh… try these fish tacos cause they are so fresh and tasty and super simple! I also made tostadas with the same ingredients using toasted flour tortillas (Chad has an aversion to the corn tortillas) and they turned out great as well.
      The Insanity workout is crrrrrazy. It’s a 60 day program, 6 days a week, about 40 minutes a day. It is maximum interval cardio, so you go full speed ahead for 3 minutes and then rest for 30 seconds. It’s pretty high intensity (my knees get a little pissed at me), but there’s lots of variation and I’ve been super impressed with the results. It’s completely bananas though.

      I used to work in a little local market here. It also serves as a gas station. We kept it super extra clean and it’s in an itty bitty one stoplight town, and I STILL wouldn’t navigate any part of it with no shoes. NO.
      The tacos were soooo delicious. So glad I found that recipe.

    • Fish tacos should be on the list of things you have to try. Usually they are full of crispy fried cod and served in a crispy shell… sooooo good.
